In the welcoming dining hall adorned with exposed beams and trompe l'oeil marble wainscoting, animal paintings depicting the four seasons grace the walls, showcasing the significance of the preserved nature surrounding this gastronomic restaurant in Hérault, which serves as a muse for Chef Thomas BLET's culinary creations.
In the other room, exuding the ambiance of a winter garden and open to the outdoors, natural light fills the space with a pleasant vegetal atmosphere. Hosts Nadège and Gérard, driven by their passion, and their dedicated team, invite you to a culinary journey of delightful, expressive, and creative dishes that change daily based on fresh arrivals and inspirations.
Sublimating the terroir
The Chef finds his inspiration in the region's produce, which he selects himself from suppliers with whom he has forged strong ties through meetings and exchanges.
Understanding their history and passing it on as best he can to each guest, sharing and discovering, sublimating the terroir and passing it on as sincerely as possible through his dishes, which change every day: this is the aim of Thomas who, after studying biology and gaining a CAP in pastry-making, took the time to hone his technique to become Chef in this gastronomic restaurant in the Hérault region, where he describes himself as an inspiring and gourmet ambassador of the terroir.
Creativity, Emotions, Flavors
Ensuring great technical precision through mastered cooking techniques and balanced flavors, the Chef delivers an expressive cuisine, adding a touch of creativity and playing with seasonings that make all the difference for him.
He composes a beautiful culinary symphony, drawing from around fifty different peppers and spices, a wide variety of oils and vinegars, to find the perfect balance. Sometimes, he enjoys creating around a single product, working and presenting it in various ways on the plates, exploring different textures, daring combinations to evoke emotions.
Menu
The gourmet restaurant offers a unique menu (€64), comprising an appetizer, starter, main course, dessert and mignardise.
For children, the menu is priced at €22. The chef offers the same menu as for adults but with portions adapted for children. Alternatively, you can request a simpler menu for the younger ones; just let us know when making your reservation.
Wine List
A large, vaulted wine cellar houses many of the region's finest wines. The wine list features bottles from estates known to Nadège, Gérard and Thomas, with whom they have exchanged know-how and passion.
Surrounded by vineyards, Château de Siran gives pride of place to the sun-drenched Minervois region, which boasts a great diversity of terroirs and some thirty grape varieties, some tannic, silky, elegant, some with a hint of fresh or candied fruit: wines from Siran, Azille, Cesseras, Minerve, Féline, Saint-Jean-du-Minervois, not forgetting La Livinière, a Languedoc premier cru...

The Cellar
Located in a 13th-century house in the Château's reception courtyard, The Cellar, the chateau's second restaurant, more of a bistro, introduces you to a generous and authentic cuisine, inspired by local products and seasonal ingredients.
In this charming setting with exposed stone vaults, the restaurant welcomes you in the beginning of autumn, showcasing the region's terrines and charcuteries, and in winter simmered dishes that evoke the family meals of our childhood.
The Bar Lounge
Exposed beams and beautiful windows, a mural by artist Stéphanie van de Walle, telling the story of the village of Siran and its lords since the Cathar wars.
In the heart of our Lounge Bar, nestled in one of the rooms of our characterful home, we introduce you to a fine selection of carefully chosen products from producers in the region and elsewhere, brought back from our travels and encounters, and we share their stories with you: lemonades and colas from Pézenas, gin from the Distillerie du Petit Grain (voted best gin in France), calvados from our producer in Normandy, and our recently discovered spirits from Savoie.
